New York Chocolate Brownie Recipe

Think brownies are just for kids? Think again. Here’s a classic New York recipe that will change your mind—and it’s quick to make.

Ingredients for about 20 brownies

  • 300 g dark chocolate, 70% cacao maximum
  • 200 g granulated sugar
  • 75 g all-purpose flour
  • 3 whole eggs and 1 egg yolk
  • 180 g butter
  • 1 packet vanilla sugar or 1 teaspoon pure vanilla extract
  • 1 pinch of salt
  • 1 pinch of baking soda
  • 80 g mixed peanuts and hazelnuts

Tip: About the fat

  • To enhance the flavor of the nuts, you can replace 10% of the butter with hazelnut or walnut oil.

Tip: About the nut mix

  • Feel free to get creative and mix different nuts. Try walnuts, pecans, cashews, almonds, hazelnuts, peanuts or macadamia nuts.
  • Just keep it to no more than 3 varieties of nuts per batch.

How to make brownies

  • 1/ Set up a double boiler.
  • 2/ Melt the chocolate over low heat, stirring constantly.
  • 3/ As the chocolate melts, add room-temperature butter. Keep stirring with a spatula or spoon.
  • 4/ Once the mixture is smooth and fully melted, pour it into a round bowl.
  • 5/ Add the sugar gradually, whisking vigorously.
  • 6/ Once the sugar is fully incorporated, add the eggs one at a time, whisking firmly after each addition.
  • 7/ Add the salt and baking soda.
  • 8/ Add the flour in small amounts, whisking constantly to avoid lumps.
  • 9/ Fold in the coarsely chopped nut mixture.
  • 10/ Preheat the oven to 180°C (356°F).
  • 11/ Use a rectangular baking pan about 22 cm (8.7 in) across.
  • 12/ Lightly butter the bottom of the pan.
  • 13/ Line it with parchment paper, letting it extend over the edges. The butter will help it stick.
  • 14/ Pour the batter into the pan and bake for 25 minutes.
  • 15/ Let cool. Your brownies are ready!

Eat the brownies plain or top them with a dollop of whipped cream. Here’s my tip: make the whipped cream with a mix of granulated sugar and hazelnut-flavored sugar. You can also drizzle with custard sauce. Enjoy!
For Easter, pipe a small nest of vanilla buttercream on top of each brownie using a pastry bag. Add colorful or chocolate Easter eggs in the center.
