New York Cheesecake Recipe

Experience authentic New York Cheesecake just as you would in New York. Follow my recipe and you’ll create something truly delicious!

Ingredients for New York Cheesecake

For the crust

  • 220 g (7.8 oz) of cookies (butter cookies, shortbread, or spiced cookies).
  • 10 g of sugar.
  • 60 g (2.1 oz) of melted butter.

For the filling

  • 450 g (1 lb) of cream cheese.
  • 1 medium lemon or 2 small ones.
  • 75 ml (5 tablespoons) of heavy cream.
  • 100 g (3.5 oz) of granulated sugar.
  • 18 g of pastry flour.
  • 2 large eggs or 3 small ones.
  • 150 ml (5 fl oz) of milk.

Recipe Steps

Start by taking all ingredients out of the refrigerator to bring them to room temperature. Preheat your oven to 180°C (350°F). While it heats, prepare the crust and then the filling.

Making the crust

  • 1/ Melt the butter gently. It should not brown.
  • 2/ Place the cookies in a sealed food bag. You can use butter cookies, shortbread, or spiced cookies, depending on your preference. I prefer spiced cookies because they’re flavorful and add more depth. Crush the cookies through the bag using a rolling pin or the palm of your hand. You want crushed cookies, not powder. Add the sugar to the crushed cookies.
  • 3/ Line the bottom of a 20–22 cm (8–9 in) springform pan with parchment paper. Make sure the springform clasp is properly closed to avoid any mishaps. 🙂
  • 4/ Spread the crushed cookies evenly on the bottom of the pan.
  • 5/ Pour the melted butter over the cookies and press down with a fork to soak them thoroughly.
  • 6/ Place the pan in the oven for 10 minutes.
  • 7/ After 10 minutes, remove the pan from the oven and increase the temperature to 220°C (425°F).

Making the filling

Beat the mixture between each step. This loosens the ingredients and creates a light, airy texture. The final filling should be smooth and creamy.

  • 1/ Beat the cream cheese in a mixer bowl until completely smooth.
  • 2/ Add the freshly squeezed lemon juice and mix well.
  • 3/ Add the heavy cream and mix.
  • 4/ Add the sugar and mix.
  • 5/ Add the flour and mix (still going!).
  • 6/ Add the eggs and mix (you know the drill…).
  • 7/ Add the milk and mix (I promise this is the last time!)
  • 8/ Pour the filling over the hot crust. Pour slowly using the back of a spoon to prevent cookie crumbs from floating up into the filling. The goal is to achieve that authentic New York look!
  • 9/ Bake for 10 minutes at 220°C (425°F).
  • 10/ Lower the oven temperature to 90°C (195°F) and bake for 55 minutes.
  • 11/ Turn off the oven and let the cheesecake rest inside for 2 hours.
  • 12/ Refrigerate the cheesecake overnight. Now you have your New York Cheesecake!

When serving, top it with strawberry, raspberry, cherry, or other red fruit coulis. Enjoy!
