Can’t make it to New York for breakfast? Bring New York to your kitchen with this pancake recipe. It’s easy and quick to make!
Ingredients for 8 to 9 Pancakes
- 220 g (7.8 oz) flour.
- 260 ml (1.1 cups) buttermilk or whole milk.
- 1 large pinch of baking soda.
- 10 g (2 teaspoons) baking powder.
- 1 vanilla bean.
- 25 g (1.8 oz) sugar, or 15 g (1.1 oz) sugar and 10 g (0.7 oz) vanilla sugar if you don’t have a vanilla bean.
- 1/2 teaspoon salt.
- 2 large eggs.
- 90 g (3.2 oz) melted butter.
My Tip for the Milk
- For authentic New York-style “Buttermilk Pancakes,” use buttermilk or fermented milk.
- You can also use whole milk.
My Tip for the Pancake Batter
- For fluffy pancakes, beat the eggs and milk together, then add the melted butter to the mixture.
- You can clarify the melted butter to make lighter pancakes. Simply remove the layer of foam that forms on top of the melted butter.
- If you like, make fruit pancakes by adding blueberries or banana slices to the batter before cooking.
Recipe Steps
- 1/ Melt the butter over low heat. Clarify it.
- 2/ Mix the flour, sugar, vanilla sugar (if you’re not using a vanilla bean), salt, baking soda, and baking powder in a bowl.
- 3/ In another bowl, beat the eggs. Add the milk, melted butter, and vanilla bean seeds (if you’re not using vanilla sugar).
- 4/ Pour this mixture into the bowl with the flour and dry ingredients. Stir with a wooden spoon until the batter is smooth.
- 5/ Heat your skillet. I recommend using a 14 cm (5.5 inch) skillet.
- 6/ Add a small piece of butter to the skillet, just enough to coat the bottom.
- 7/ Make sure the butter doesn’t burn. Avoid high heat because pancakes burn quickly.
- 8/ Once the skillet is hot, pour a generous ladle of batter.
- 9/ Cook until you see small bubbles and bumps on the surface of the pancake, then flip it with a spatula.
- 10/ Watch carefully and lower the heat slightly. The pancake will be done in less than a minute.
- 11/ Serve your pancakes with butter, powdered sugar, maple syrup, berries, banana slices, fried eggs, or whatever you like. They’re especially delicious with crispy bacon and whipped cream drizzled with a touch of maple syrup. Enjoy!
