The Impossible Burger: Meat-Free Innovation

  • The Impossible Burger looks like a real burger and tastes like beef, but it isn’t. Unlike traditional burgers, the Impossible Burger contains zero meat—only plant-based ingredients. Perfect if you’re vegetarian.
  • It took California-based Impossible Foods nearly five years of lab work to isolate plant proteins and recreate the texture and flavor of meat. The recipe combines wheat, coconut oil, potato protein, and heme—a molecule found in blood and abundant in meat. The heme itself is recreated from leghemoglobin, a protein present in certain plants.
  • Impossible Foods highlights the environmental benefits of their burger. “Because we don’t use animals, we’ve created a burger that uses 95% less land, 74% less water, and produces 87% fewer greenhouse gas emissions—with no hormones or antibiotics,” the company states.

Where to Eat a Meat-Free Burger in New York

  • Several restaurants in New York serve the Impossible Burger. Try 7th Street Burger in East Village at 91 East 7th Street, near 1st Avenue, in the East Village neighborhood.
  • Another option is Bareburger, a fast-food chain. Find a location in Greenwich Village at 535 LaGuardia Place, just south of Washington Square Park. Bareburger also has a Midtown location at 430 3rd Avenue at 30th Street, between the Empire State Building and the Flatiron Building.
  • Fat Boys Burgers in Hell’s Kitchen is another solid choice. Located at 853 9th Avenue between 55th and 56th Streets, this small restaurant sits between Columbus Circle and Times Square.
  • Holy Cow in the Lower East Side is worth a visit too. The address is 34 Canal Street, near the East Broadway subway station and close to the Museum at Eldridge Street.
